The Seelbach Hilton Announces New Executive Chef Paul Sant
Australian Chef brings 25 years of international culinary experience to historic Louisville hotel
Louisville, KY – March 04, 2019 – The Seelbach Hilton, Louisville’s most prestigious hotel, is delighted to announce the appointment of Paul Sant as the new Executive Chef. Sant comes to The Seelbach Hilton with 25 years of experience in the fine dining, hospitality and restaurant industries and will be overseeing all aspects of the hotel’s culinary operations.

A native of Victoria, Australia, Sant’s passion for food and the utilizing the freshest ingredients has led him on a culinary pursuit that ultimately took him around the globe.
Chef Sant began his career as an apprentice at the Regent Hotel, a Five Star Hotel, in Melbourne, Australia. From there his culinary journey has included stops across several continents. He honed his skills in London, England, while serving as the Chef de Partie at the renowned Hilton Olympia. Then he worked in Toronto, Canada at the AAA Four Diamond resort Westin Harbour Castle where he regularly prepared dinners for the Prime Minister of Canada.
Sant’s career path then turned tropical as he worked at Cambridge Beaches in Bermuda and then Miami’s Marriott Biscayne Bay, where he perfected preparing local seafood and fresh local ingredients, while putting his own spin on traditional island favorites. After that, he continued his career in the United States, serving as Executive Chef at the Tarrytown House Estate on the Hudson in New York and then most recently at Louisville’s Crowne Plaza hotel.
As Chef Sant himself admits, his worldly experience has greatly influenced his culinary skills in a substantial way, allowing him to create flavor combinations that impart original and unique qualities to dishes.
“The opportunity to join a historic property like The Seelbach Hilton is the natural next chapter in my culinary journey,” said Chef Sant. “I am looking forward to bringing the hotel’s already excellent on-site dining options to the next level. I’m honored to have been made part of the hardworking Seelbach team and look forward to the future growth of the property’s on-site restaurants,” he said.
As the Executive Chef at The Seelbach Hilton, Sant will oversee all culinary operations of Gatsby’s on 4th, Old Seelbach Bar, special events at The Oakroom, the banquet kitchen and in-room dining.
